Sweet Veggie Bowl
It can be gluten-free, dairy-free & vegan. It is packed with veggies, but you can’t even taste them!

Serves 1
INGREDIENTS:
1 cup steeped banana cinnamon tea (or tea of choice)
2 T rolled oats
2 T tvp (or 2 more T rolled oats but tvp adds texture & more protein)
4 T riced cauliflower
4 T shredded zucchini
4 T shredded carrot
1 T pumpkin puree
1/4 scoop (vegan) protein powder
1 T ground flaxseed
1 T chia seeds (can be in mixed in or added on top of oats for crunch)
1/2 t cinnamon
1/4 baking powder (optional to add volume)
stevia to taste (optional)
DIRECTIONS:
1. Combine all ingredients (except the vanilla extract, stevia & baking powder) in a saucepan and bring to a boil over high heat.
2. Once a boil is reached stir and let cook 5 mins stirring occasionally.
3. Reduce heat and let simmer about 5 mins (or until desired consistency), stirring occasionally.
4. Stir in vanilla extract & stevia. If you want to add volume, add the baking powder and stir vigorously for 30 seconds & watch your creation fluff-up.
5. Enjoy!
